Creamy Chipotle Kale Salad

Who would have known that kale could taste so good! I was AMAZED when I first tasted this recipe, and we’ve perfected it over the years to make it even more outstanding. You’re getting one of the most nutrient rich vegetable on the planet with the kale. It’s loaded with calcium, magnesium, beautifying sulfur, iron, and silicon. And because it’s a delicious raw salad it has all of it’s enzymes in tact and you get to have the MAXIMUM amount of power in each bite.

Also we have the creamy goodness of the avocado, which makes this an absolute pleasure to eat. The avocado provides potassium for your muscles, fiber, and essential fats that are great for your hormones and brain.

You also get the powerhouse protein from the hemp seeds. It’s a complete protein that also has vitamins, minerals, and essential fatty acids to round it all out. Every ingredient in this dish is consciously chosen to deliver BIG on the nutrition and the taste. Here is the recipe, make sure to share this with friends and family!

Creamy Chipotle Kale Salad

Ingredients

*4 heads kale

*2 cups cherry tomatoes, halved

*1 cup hulled hemp seeds

*2 tbsp of celtic sea salt

*1 cup hulled hemp seeds

For the dressing

*3 ripe avocados

*2 dried chipotle peppers

*1/2 cup olive oil

*2 tbsp of organic maple syrup

*1/4 cup fresh squeezed lemon juice

*1/4 tsp cayenne pepper

Wash the kale and remove the stems, then shred the kale into small pieces with your knife. Place into a bowl, add the salt and massage the kale until it wilts and takes on a cooked texture. Next, mix the tomatoes and hemp seeds to the bowl. Blend all remaining ingredients in a high-speed blender until creamy, and then mix it together with kale by hand.

  2. I wonder how this would taste with cumin or tahini in the dressing….. salivating over here.

  3. @ Shu-Lin Englert ….you can always adapt any recipe to suit your needs. Processed table salt is far different then sea salts in my opinion…. but you can always replace salt with kelp granules. Not sure if it will have the same effect on the kale….

  4. How did you know about the love i have for Kale?! I’m eating my Kale salad for lunch right this second! I’m going to try this out. It sounds really good. The dressing I made was a peanut vinagrette. I’m interested to see how this one tastes. Thanks for the amazing ideas and advice!

    1. Whitney, your peanut vinaigrette sounds VERY interesting… You’ll definitely have to let me know the recipe so I can try it out. Long live the Kale!

  5. It sounds like too much salt in this recipe. I believe that every form of salts is toxic to any human body. If salt were a natural food for men, we could simply consume salt as our food.

    1. Thank you for your opinion, Shu-Lin. Humans have actually been consuming salt since the beginning of documented human history. Even animals in nature LOVE when they find a source of salt… When the salt lick gets put out on the farm, the animals go straight for it without hesitation.

Please understand that you are coming from a place of belief, which is AWESOME, but we always want to keep in mind the big picture, and what we have deduced may not actually be the way things are. True natural salt is more bioavailable to the human body than a mineral supplement. It’s the Earth Element, and critical to our blood (which is 1% saline, which is a LOT). Ask yourself, are we more of an ocean inside or a lake inside? Just by answering that question you’ll have a better understanding of how to approach a peace in your mind with salt.

As for this AMAZING recipe, the salt is the graceful conduit to breakdown the plant fibers for us and make the kale more palatable for our enjoyment.

Good luck on all your health explorations!
